Instructions

Step 1
For ice cream, in one sauce pan, add yolks and sugar and whisk until it becomes pale yellow. In another sauce pan, add milk and cream on medium low heat until it reaches a simmer (about 8-10 mins.) Add heated cream mixture slowly to the egg yolks and whisk to combine. Place the combined mixture on medium low heat and place a candy thermometer in the pot. Cook and stir until the mixture reaches 165 F. Ensure it doesn’t boil. Add mixture to a glass container and place in fridge for 2 hours or overnight.
Step 2
Ice cream (continued): for ice cream churning, I used the kitchen aid attachment, but there are many substitutes. If using the kitchen aid attachment, place ice cream custard into the bowl and place on low speed for 20 minutes. Transfer to a container and place in freezer.
Step 3
For caramel: Heat sugar and water in a large pot on the stove on medium heat. Don’t mix the sugar and let melt and bubble until it develops an amber colour (see photo) At this point, add the butter one tbsp at a time, whisk. (The butter will bubble up so be careful) Take the mixture off the heat and add the cream. Set aside to cool for about 15 minutes and transfer to a container.
For caramel: Heat sugar and water in a large pot on the stove on medium heat. (The butter will bubble up so be careful) Take the mixture off the heat and add the cream. Set aside to cool for about 15 minutes and transfer to a container.
Step 4
For crust, mix flour, salt, cinnamon and sugar in a large bowl. Add cubed cold butter and use a pastry cutter or fork to breakdown the butter into pea sized chunks. Add cold water and mix together until it forms a shaggy dough. Pour out dough on a work surface and form into 2 equal disks. Cover disks with plastic wrap and place in the fridge.
Step 5
For filling, peel and chop apples. Add all ingredients (except the butter) into a large bowl. Mix until incorporated. Place a large pan on the stove at medium heat. Melt butter and add apple mixture. Cook for 8-10 minutes until the apples still have texture but are relatively soft. Add mixture back into a bowl to cool.
Step 6
For pie assembly, preheat oven to 425F. Roll out one pie crust and place it in a pie plate. Place all the filling into the pie. Roll out the second dough and cut into strips if making a lattice. Make a lattice pattern and transfer to the pie. Secure the edges and entire pie with egg wash. Sprinkle with coarse sugar. Bake pie for 10 minutes at 425, then change the heat to 350F. Bake the pie for another 45 minutes or until desired colour. Let pie cool for about 30 minutes before slicing and enjoying :)
