Totally Green Salad
This is a perfect salad to go with a lamb chops and baby potatoes with ghee and parsley. Omit the feta while on Whole30.

1 headbutter lettuce
torn into bite-size pieces
½ cupsugar-snap peas
halved diagonally
4 spearsasparagus
steamed and cut into 2-inch pieces
1baby cucumber
sliced
1zucchini
small, peeled as ribbons
2green onions
sliced
¼ cupfresh dill
chopped
¼ cupfeta cheese crumbled
omit on Whole30
1avocado
sliced
2 Tbsppistachios
chopped
¼ cupfresh lemon juice
start of dressing
1 Tbspdijon mustard
1shallot
minced
½ cupavocado oil
¼ cupolive oil
¼ cuppistachios
chopped
½ tspsalt
¼ tsppepper
Instructions
Step 1
Layer all salad ingredients, starting with the butter lettuce, in a big shallow bowl or platter.
Step 2
Place all dressing ingredients into a small bowl and whisk until combined.
Step 3
Drizzle salad with dressing and toss gently.
