Instructions
Kiwi Insert
Step 1
Peel and chop your kiwi and place in a pan with the glucose
Step 2
Once at boiling point mash down the kiwi to a desired consistency and add the pectin.
Step 3
Once the Pectin has been combined, allow the mixture to cool and place in desired mould. Once cool, place in the freezer to set
Golden Cremeux (Custard)
Step 4
Bring the cream and milk to a boil
Step 5
Whisk your egg yolks in a bowl and add the hot cream mixture whilst whisking
Step 6
Return to the pan and cook out until it coats the back of a spoon
Step 7
Add the chocolate and leave to freeze in an insert mould of your choice
Biscuit Base
Step 8
Smash your biscuits into a fine crumb and melt your butter
Step 9
Combine in a bowl and empty into your cake tin
Step 10
Press down until firm and tidy the edges with a spoon
Step 11
Place in the freezer to set whilst you make your filling
Cheesecake Filling
Step 12
Remove your base from the freezer and pipe a thin layer of cheesecake filling onto the base
Step 13
Remove your frozen kiwi and golden Cremeux centres from the freezer and place in the centre of your cake tin
Step 14
Fill in with your Mascarpone cheesecake making sure that it is all nice and tight and no air bubbles around the kiwi insert

Pipe the remaining cheesecake onto the top and smooth off with a palette knife

Place in the freezer to set for 3 hours or until solid
Chocolate Wrap & Decoration

To make your chocolate wrap simply melt the white chocolate and add your oil based food colouring, whisking until combined

Lay out a long acetate strip and pour your chocolate over, smoothing with a palette knife
Step 19
Lift your acetate strip out of the chocolate giving a clean cut strip and set aside to "set"
Step 20
"Set" is classed as no longer runny, but not rock solid as the chocolate needs to be pliable. This cannot be a set time as it will differ every time, we recommend keeping an eye on your strip and once it has gone matte in colour and tacky to the touch its ready to wrap

Remove the cake from the freezer and wrap in the chocolate, allowing the temperature of the cake to fully set the chocolate

Once the chocolate has set, remove the acetate strip and begin decorating with your Zespri GoldenSun Kiwi's

Defrost in the fridge for 6-8 hours before serving
