Instructions
Step 1
Turn the oven broiler to high.
Step 2
Place the baguette on a baking sheet.
Step 3
Drizzle the baguette with olive oil.
Step 4
Broil the baguette under the broiler until golden brown- keep an eye on it so it doesn’t burn!
Step 5
Remove the baguette from the pan and rub the surface of the bread with the garlic clove.
Step 6
Spread the top of the toasted bread with the eggplant, tomato, and onion mixture.
Step 7
Top with burrata cheese covering the surface area the best you can.
Step 8
Drizzle with more olive oil and season with salt and pepper.
Step 9
Tear the fresh basil leaves over the top of the bruschetta, slice, and serve!
Step 10
*BONUS Option* Stick the bruschetta back under the broiler for another minute prior to adding the basil for a delicious warm version of this appetizer!
