Step 1
Heat oil in skillet. Fry pork chops until browned on both sides. Remove from pan and set aside.
Step 2
Boil potatoes until tender. Add butter and milk and mash. Add salt and pepper to taste.
Step 3
Pour off all but a tablespoon of oil. Mix flour and enough milk to make it smooth and pourable. Pour into skillet stirring. Add more milk when it thickens to desired thickness. Add salt and pepper.
