Instructions
Step 1
Wash and chop the tomatoes and red pepper. Add to a baking sheet and put in the oven at 210 deg. Celsius for 20 minutes.
Step 2
In the meantime, mince the onion and garlic and prepare the rest of the ingredients. Mix all the seasonings in a separate bowl.
Step 3
In a large pot, melt down the 2 Tbsp. of butter and the olive oil. Then add in the onion for 2 minutes. Then add the garlic and saute for another 2 minutes.
Step 4
Add the tomato puree and chopped basil and saute for another 3 minutes.
Step 5
Add the roasted tomatoes and pepper, and mix everything together.
Step 6
Add the 2 cups of chicken broth, along with the seasonings. After mixing well, add the 1 cup of heavy cream.
Step 7
Blend everything together until smooth with an immersion blender. Then leave to simmer for a few more minutes.
Step 8
Serve and enjoy!
