Ingredients
2 servings

3 tablespoonsbutter
grass-fed or irish, or ghee

3cloves garlic
minced

4 cupscauliflower rice
can either rice an entire head in a food processor or purchase riced

¼ teaspoonchili powder
or to taste

pink himalayan salt

pepper
fresh ground, to taste

¼ cuplow sodium vegetable broth
you can also use chicken broth, bone broth, beef broth

1lime juiced
Instructions
Step 1
Melt butter over medium heat.
Step 2
Add garlic and cook and stir for 2 minutes; careful not to burn the garlic.
Step 3
Stir in the cauliflower rice; season with chili powder, salt, and pepper.
Step 4
Cook and stir for 2 minutes, mixing around until everything is thoroughly combined.
Step 5
Add in the vegetable broth and lime juice. Cook until the liquid has evaporated(you can add any veggies you like, spinach, mushrooms etc. at the same time you add the cauliflower, get creative using herbs as well)
Step 6
Remove from heat and taste for seasonings; adjust accordingly.
