Asparagus-Tomato Frittata

Asparagus and tomatoes are both excellent sources of selenium, which helps regulate thyroid function and improves the immune system. This dish is both a hearty and healthy way to start the day.

Instructions

Step 1
Preheat the broiler.
Step 2
Beat the eggs in a small bowl with the yogurt and salt.
Step 3
Heat the butter in an 8-inch oven-safe frying pan over medium heat.
Step 4
When the butter has melted, add the asparagus and cook until just tender, approximately 3 minutes.
Step 5
Add the egg mixture and tomato to the pan and stir with a spatula until just blended.
Step 6
Allow the eggs to set on the bottom, 1 to 11/2 minutes.
Step 7
Remove the pan from the heat and slip it under the broiler until the top of the frittata is just set and puffy, approximately 1 minute.
Step 8
Loosen the frittata from the pan and place on a serving dish.
Step 9
Serve immediately.
