Step 1
Preheat the oven to 400°F and cook bacon or sausage for 10 minutes.

Saute veggies in a cast iron pan on the stove top.
Step 3
Whisk eggs with pepper, salt, and cream.
Step 4
In a cast iron skillet or glass pan spread mash sweet potatoes. Add veggies with diced mangoes. Then pour whisk eggs into the mixture and layer the cucumber pieces on top.
Step 5
Cover with cheese and parsley and bake in the oven until eggs are set for 14-16 minutes.
Step 6
Broil for 1-2 minutes. Let cool down when done and enjoy!
