Step 1
To make the pie crust at home, start by mixing all the dry ingredients together. Cut the cold butter into small cubes, coat them well with the flour, then smash them between your fingers. The butter should be about pea to almond size then continue to mix with the flour. Add about 2 tbsp ice water at a time and use both of your hands to mix well, until the flours are coated well with water. The dough should just hold together but shouldn't be sticky. If the dough is dry, sprinkle a little bit of water only on the dry portion of the dough.Wrap the dough in a wrap then let it rest in the refrigerator for at least 2 hours or overnight.
Step 2
When the pie dough is rested, take it out of the refrigerator, then let it rest outside for 5-7 minutes until the dough is slightly soft so it’s easier to roll it up. Dust some AP flour on a working surface and roll out the pie dough (the thickness should be 5mm ).
Step 3
Place the pie dough sheet on the pie pan, then lift the edges and tuck the dough into the bottom of the pie pan. Let the pie dough rest in the refrigerator for 15 minutes to make sure the dough is properly set on the pie pan.
Step 4
Take it out of the pan, and cut the edges one inch bigger than the pan’s edges. Tuck and fold the edges inside the pie pan. Use a fork to make small holes around the edges so the pie can release steam and bake well.
Step 5
To par bake the pie crust, set your over to 430 °F
Step 6
Add a parchment paper in the middle of the pie dough, then put pressure on the pie with beans or pie weights. Bake the pie for 13 minutes then take out the pie weight and put the pie crust back in the oven for 7-10 minutes until the pie bottom is light golden. Brush some egg wash right after taking it out of the oven.
Step 7
Let the pie crust chill completely before adding the fillings.
Step 8
In a large bowl, add the room temperature cream cheese, brown sugar, and mix it. Add the rest of the ingredients and mix it with a hand mixer until the mixture is smooth.
Step 9
Preheat the oven to 330 °F.
Step 10
Pour the cinnamon filling in the chilled pie crust, and bake it for 40-50 minutes until the filling is set and slightly soft in the center.
Step 11
Let the pie chill then add the whipped cream on top, and enjoy.
