Ingredients

1onion
finely diced
2carrots
peeled and diced
2celery sticks
stringed and finely diced
500glean minced beef
2 Tbsptomato ketchup
2 Tbspbrown sauce
1 Tbspworcestershire sauce
2 Tbspplain flour
½ tspfine sea salt
360gMaris Piper potatoes
peeled and cut into 2cm cubes
150mlwater
freshly ground black pepper
2 sheetsshortcrust pastry
Instructions
Step 1
Dry fry the onion, carrots, celery and beef together on a high heat until the meat is browned.
Step 2
Reduce heat and add the ketchup, brown sauce, worcestershire sauce, flour and seasoning.
Step 3
Cook for 1 min, then add the potatoes and water and bring to the boil.
Step 4
Reduce heat, cover and simmer for 15 minutes until potatoes are tender.
Step 5
Leave to cool
Step 6
Preheat oven to fan 180°
Step 7
Roll a layer of pastry in a 20cm square cake tin, allowing some overhang.
Step 8
Pole the filling into the tin, spreading evenly.
Step 9
Brush the edges of the pastry with beaten egg.
Step 10
Roll the next sheet of pastry on top of the pie. Trim any excess and seal the edges nicely
Step 11
Pierce top several times with a fork and brush with beaten egg.
Step 12
Bake in the oven for 30 mins until pie is golden brown.
Step 13
When you take from the oven, runa knife around the edge to loosen it. Leave for 5 mins before serving with veg and gravy.
