Flank Steak Preparation
2 lbflank steak
1yellow onion
sliced
6garlic cloves
chopped
3bell peppers
sliced
1 ccilantro
chopped
2 Tbsptomato paste
4roma tomatoes
crushed
1 cgreen olives
halved
1 Tbspground cumin
1 Tbsppaprika
1 Tbspdried oregano
1 packetsazón
2dried bay leaves
adobo seasoning
to taste
salt
to taste
pepper
to taste
1 cdry white wine
water

Instructions
Prepare Steak
Step 1
Season steak with adobo seasoning, salt, and pepper
Step 2
In deep pot on high heat, add tbsp of neutral oil and sear both sides of flank steak. Then remove from pot
Make Cuban Sofrito
Step 3
In same pot steak was seared add onions, garlic, and bell peppers on medium heat. Sauté for 5-10 minutes until vegetables are soft
Step 4
Secondly, add tomatoes, tomato paste, cilantro, cumin, paprika, oregano, sazón, bay leaves, and white wine. Bring to a simmer
Step 5
Add back flank steak and pour additional water into pot until steak is submerged in liquid
Step 6
Braise steak for 2-3 hours until meat is tender and can shred easily
Step 7
Remove meat and bay leaves from pot. Shred beef and add back into pot along with green olives. Fully combine in stew and simmer for additional 5-10 minutes
Serve With
Step 8
Serve over rice, with cuban style black beans
