Instructions

Step 1
Preheat oven to 375. Trim the stems off the zucchini. Cut in half length wise. Scoop out the zucchini. Reserve scooping.
Step 2
Brown sausage and add tomatoes and diced zucchini
Step 3
Add bread crumbs to sausage mixture. Cook for a few minutes and add chicken stock if the mixture is too thick. Take it off the heat and let it cool down a few minutes. Add Parmesan cheese and season to taste.
Step 4
Fill zucchini halves with sausage mixture and top with feta cheese. Bake until the zucchini is soft. 20-25 minutes.
