Instructions
Step 1
Peel and slice eggplant; place on cooling rack and sprinkle with salt. Leave for 20 or so minutes to pull out bitterness.
Step 2
Rinse slices. Dredge in flour, egg wash, then bread crumbs.
Step 3
Fry in olive oil, drain on paper towels.
Step 4
In casserole dish, layer eggplant, sauce, cheese a few times (eggplant, sauce, cheese, eggplant, sauce, cheese, etc) ending with cheese as top layer. This can be spread out over dish or individual piles (like napoleons).
Step 5
Bake at 350 for 20-30 minutes or until cheese is browned and sauce is bubbly.
