Step 1
Preheat oven to 350 degrees. Combine all ingredients in a large bowl. Grease a 9x5 loaf pan with cooking spray. Poor batter into pan and spread evenly. Sprinkle a coat of coconut sugar on top. Bake for 50-60 minutes.
