This is a master recipe that can be adapted to fit. It's good for leftovers. It's 1-2 cups dairy, 3-4 eggs, and 1-2 cups filling. If using fresh tomato, cook first or put thin slices on top of pie after it is half done. Makes good leftovers that can be stored in the fridge and eaten at room temperature.

Step 1
Set out eggs and dairy to warm to room temperature. Preheat oven to 375°F. Roll out pie dough and press into greased pie plate or 11" by 7" pan.
Step 2
Precooked any filling that needs cooking. Put filling in pie plate, top with cheese.
Step 3
Beat eggs well. Add flour, beat well. Add milk and seasonings (1/2 teaspoon salt if not using a salty filling), beat well. Pour into pie plate. Bake 35-40 minutes. Cool at least 10 minutes.
