Microwave Strawberry Compote

Microwave is the best way to cook this super-quick compote. Eat it on its own with some yogurt or spooned over a slice of simple pound cake for an easy dessert. It's also a good way to use frozen strawberries or to use up fresh strawberries that aren't quite perfect. When using frozen strawberries, don't defrost them first — just cook them longer than fresh ones.

Step 1
Place the strawberries in a microwave-safe ceramic or Pyrex bowl and sprinkle with the sugar and water. Cover with a ceramic plate and cook at high power for 2 minutes (or 3 minutes if using frozen berries).
Step 2
Remove from the microwave and uncover carefully, as there will be steam. Stir the fruit to mix. Cover with the plate again and return to the microwave. Cook at high power for 1 minute more, then leave it covered in the microwave to steam for 5 to 10 minutes. Serve immediately or refrigerate for later use.
