Ingredients

For the dressing -
1 x 8 ozHemp Seed Goat Cheese
Grounded
1 x 8 ozCheese Free Cheese
Grounded, American Style
1 bunchflat leaf parsley
1 bunchscallions
2 ozbaby spinach leaves
2cloves garlic
peeled
3 tablespoonssherry vinegar
2lemons
3 tablespoonsextra virgin olive oil
sea salt
black pepper
For the salad -
Instructions
Step 1
Zest and juice the 2 lemons and add to a blender bowl. Add the remaining ingredients for the dressing and blend on high speed until smooth and creamy. Season with salt and pepper to taste. Refrigerate until needed.
Step 2
Chop the iceberg lettuce to your liking. If you like it fine, slice it fine, if you prefer it in large chunks, that's ok also. Add to your mixing bowl.
Step 3
Same deal for the cucumbers and apples. Slice to your liking and add to your bowl.
Step 4
Finely dice the jalapeño and add to your bowl. If you like it spicy, leave the seeds in for extra heat.
Step 5
Finely slice the chives and add to the salad. Add your dressing and mix until well combined. Season with salt and pepper if needed. Enjoy!
Step 6
*salad will keep well in the fridge for a couple of days. For further shelf-life if you're meal planning or whatnot, replace the iceberg lettuce with finely shredded green cabbage for a knockout coleslaw.
