Easy Summer Rolls with Peanut Dipping Sauce
EASY SUMMER ROLLS with PEANUT DIPPING SAUCE 🥜 one of the many recipes I made this weekend☀️ if you haven’t made your own summer rolls, do NOT to be intimidated! minimal ingredients & fairly cheap, all from whole foods & trader joe’s 🙌🏼

Ingredients

rice paper
used as wrappers
tofu
sprouted
curry powder
avocado oil spray
red bell pepper
thinly sliced
seedless cucumber
thinly sliced
avocado
thinly sliced
sprouts
crunchy, sub any veggie
PEANUT SAUCE
for dipping
Peanut Sauce
Instructions
Step 1
DRAIN & PRESS tofu, cut it into thin strips, sprinkle with curry powder & avocado oil spray
Step 2
BAKE at 425 degrees for 10-12 minutes. REMOVE from oven.
Step 3
DIP each rice wrapper in lukewarm water & FILL with 1-2 of each listed above.
Step 4
TUCK IN the sides and roll away from you. the rice wrapper will stick and hold its shape, just make sure not to overfill!
Step 5
COMBINE peanut butter, coconut aminos, sriracha and sesame oil.
Step 6
ADD IN water or coconut milk, (slowly!) stirring while you add it in, until it reaches desired consistency (it can be as thin or thick as you’d like!)
Step 7
dip and enjoy!!
