Instructions
Step 1
Put brown rice, and twice as much water, on stove to boil. Set timer for 40 minutes

Preheat oven to 400F
Step 3
Mix 6 tbsp soy sauce, 4 tbsp rice vinegar, 3 tbsp agave, and 1 tbsp sesame oil in a large bowl. Remove stems from Portobello mushrooms and cut in 1.5 in cubes. Add to bowl and marinate for 10+ minutes

Chop bell pepper into small strips
Step 5
Prepare baking sheet with foil and nonstick oil. Spread mushrooms and sliced bell peppers evenly on sheet. Bake for 15 minutes

Shred carrot, chop red onion, and slice avacado
Step 7
Prepare spicy mayo by combining 1/2 cup mayo, 1 tbsp Sriracha, and a splash of spy sauce
Step 8
Prepare bowls by adding rice, followed by remaining ingredients - include extras like cubed pineapple or others at this step. Top with sesame seeds and spicy mayo
