Mediterranean Chicken Kebab

One of my favorite recipes for warm-weather entertaining, these chicken kabobs are marinated in a tangy blend yogurt, garlic and spices and then grilled until golden brown. They’re wonderful over a bed of golden basmati rice pilaf and almonds. Just be sure to make extra — the first time I made these kabobs for a crowd, I actually ran out of food!

Instructions

Step 1
Preheat oven to 425f

Lined baking sheet with parchment paper

Cut chicken into small chunks for skewers
Step 4
Add yogurt spices and olive oil and marinate overnight

Skewer chicken and vegetables and place on parchment lined tray
Step 6
Bake on 425F until golden in color (turning skewer’s)
Step 7
Enjoy with basmati rice and salad

Basmati Rice

Step 8
2 cups rice 4 cups water
Step 9
Mix 1 teaspoon turmeric, 1 tablespoon of butter, salt, 1 bay leaf, and maggi
Step 10
Bring to a boil, cover, and lower heat
Step 11
Cook until water is dissolved and rice is tender (don’t be afraid to taste it to check)
