Instructions
Step 1
Add 1-1.5 lbs. ground beef to a large pot with seasoning salt, pepper, and half of the diced onion. Cook beef until browned, about 8 minutes on medium.
Step 2
Drain the beef, then season with enough chili powder to lightly coat the top of the ground beef, about 1 Tbsp., and stir. *KP's note: add a splash of lime juice for a little zest!
Step 3
Add in all additional chopped veggies and let them cook down for about 5 minutes.
Step 4
Add in two cans of diced tomatoes, season with salt and a pinch of sugar, and simmer for 5 minutes.
Step 5
Add in all 5 cans of beans and stir. KP's note: I only use 4 cans of beans since my pot isn't quite as big as Mama Poni's.
Step 6
Add 2 large cans of tomato sauce, or a third if you prefer a looser chili.
Step 7
Stir in garlic and all seasonings. Simmer for at least 10 minutes. KP's note: I like mine with more heavy handed spice than Mama Poni, so I like to add pickled jalapeno, smoked paprika, bay leaf, black pepper, quite a bit more chili powder, and a dash of cayenne for spice.
Step 8
Serve at this point, or continue simmering as long as you wish (the longer the better for chili!). Serve with shredded cheese, crackers, sour cream, or more jalapenos!
