I was a bit scared that this pastry will come out dry. I was totally wrong this is probably the best lemon loaf I have ever eaten.

Instructions

Step 1
Mix together butter and sugar and extract. Then one at a time add your eggs and mix until combined. Now whisk in milk, lemon juice and lemon zest. Finally add all the dry ingredients. Pour the mixture into a loaf tin and bake at 160 Celsius for 45 minutes.

Step 2
While still hot poke holes into the cake. Mix sugar and lemon juice and pour it all over the top. At the end mix milk and sugar and pour it on top.
