Bacon Cheddar Stuffed Meatloaf

Ingredients
4 servings
1 lbground beef
½ cuptomato sauce
1egg
large
2 Tbsgolden flaxseed meal
1 tspsalt
½ tsppaprika
¼ tsppepper
4 slicesbacon
uncooked
⅓ cupshredded cheddar cheese
Glaze
Instructions
Step 1
In a large bowl combine ground beef, tomato sauce, egg, flaxseed meal, garlic powder, salt, pepper and paprika. MIx uintil combined.
Step 2
Place a 20 inch sheet of aluminum foil on a flat surface. Place half of the meat mixture in the center of the foil, mold to a flat oval shape.
Step 3
Place the bacon slices in a single layer on top of the meal and sprinkle the cheddar over top. Place the other half of the meat mixture on top and use your hand to shape into an oval.
Step 4
Fold the sides of the foil up and around the. sides of the meat to form an loaf pan. Set aside.
Glaze
Step 5
Mix glaze and pour over meatloaf
Step 6
Add 1 cup water to the bottom of the inner ;pot. Place the loaf on the steam rack and lower the rack into the pot.
Step 7
Cover lock lid, and flip the stream release handles to the sealing position. Select pressure cook (high) and set the cook times for 30 minutes.
Step 8
While the meatloaf is cooking, preheat the oven broiler to 550.
Step 9
When the cook time for the meatloaf is complete, quick release the pressure. Open the lid. and carefuly grasp the rack handles to lift the rack and meatloaf out of the pot.
Step 10
Transfer the loaf pan to a large baking sheet. Place the meatloaf under the broiler to brown for 2 minutes or until the glaze is bubbling.
Step 11
Transfer the browned meatloaf to a serving plate,k discard the foil and cut the loaf into 8 slices. Serve hot.
