Instructions
Step 1
Brown the ground sausage in a dutch oven or large stock pot.
Step 2
Remove the browned sausage and set aside. Add the onions to the pot and cook until yellow over medium heat (6 or 7).
Step 3
Add diced garlic and cook until fragrent (one minute roughly)
Step 4
Add browned sausage back in and stir. Add cream, chicken stock and tomato paste. Stir well and bring back to a boil (bump heat up to 8 if necessary).
Step 5
Add pasta and stir. Cover and let simmer until noodles are cooked (ten minutes at 6 or 7). Make sure to uncover to stir occasionally and prevent the pasta from sticking.
Step 6
Once pasta is cooked, remove the lid. If the remaining liquid is too much (pasta is swimming) skim off some broth (aim for any unwanted oil). Note that there should be some liquid under the pasta for the next step.
Step 7
Add in shredded cheese slowly as you stir. Make sure to stir throughly to prevent the cheese from clumping.
Step 8
Plate and serve, add salt and pepper to taste.
