Overnight Baked Oatmeal

Let the oats soak in the fridge overnight or for 12 hrs with milk or water.
Letting it soak for a long period of time makes digestion easier and much tastier to eat.
This baked oatmeal was made every other week by mom because I loved it so much.
I enjoy eating this with bacon or sausage, eggs, yogurt, banana, and peanut butter on top with a bit of Kerrygold butter.
Also makes for a great daily snack.

Ingredients
6 servings
6 cupsold fashioned rolled oats
2 ½ cupsmilk
Regular, Oat milk, coconut, almond, or water
3 tspbaking powder
2 tspsea salt
2 tspcinnamon
2 Tbspolive oil
6eggs
1 cupplain yogurt
½ cupchocolate chips
or whatever you like for topping, optional
2 Tbsphoney
or maple syrup, optional
6 tripsvanilla extract

Instructions
In a Large Bowl Add...
Step 1
Rolled Oats, milk and stir.
Step 2
Let soak in the fridge for 12 hours covered.
Step 3
Mix in all other ingredients after soaking.
For Baking
Step 4
Pre-heat oven to 350°F.
Step 5
Grease a 15"x10" glass baking dish or 3-qt.
Step 6
Bake for 30 minutes uncovered.
Step 7
A toothpick should come out clean when done.
Step 8
Let cool down on a rack before serving.
Step 9
Serve with toppings and sides, enjoy!
