Ingredients

1 lbItalian sausage
no casing, I used sweet sausage
2 Tbspolive oil
1 tspitalian seasoning
1 x 10 ozdiced tomatoes
can
1 cupsweet onion
yellow
1carrot
diced, or sub w/ bell pepper
2 Tbspminced garlic
½ tspsalt
to taste
½ tsppepper
to taste
2 Tbspall purpose flour
7 cupschicken stock
1 x 20 oz3 cheese tortellini
I like the bite sized ones
4 cupsspinach
3 Tbspfresh basil
1 ½ cupheavy cream
Instructions
Step 1
In a large pot or Dutch oven, heat up the oil and cook the Italian sausage (removed from casing). Cook for 3-4 minutes and drain the excess oil.
Step 2
Add Italian seasoning, canned tomatoes, garlic, onion, carrot, salt and pepper then cook for a few minutes. Add flour and cook for 1-2 minutes and add the chicken stock.
Step 3
Bring to a boil, then cover and simmer for 10 minutes. Add tortellini and cook for 5 minute then add in spinach, basil and heavy cream.
Step 4
Cook for another 2 minutes and serve immediately. I like to top this with grated parmesan cheese and crushed red peppers.
