Instructions

Step 1
Cook 1 cup of rice in a rice cooker then spread it on a baking tray to cool once cooled cover and put into a fridge for 24 hours. (You can fry cooked rice as long as it is cold and dry but it is best to use day old cooked rice)

Dice the chicken breast roughly in to 1 inch cubes and put in a bowl with half a cup of light soy sauce,half a cup of shaohsing rice wine and 1 egg white (save the yoke for later) leave in fridge for 30 minutes.

Mix 1 tablespoon of xanthan into a cup of water to make xanthan gloop to use later

After the chicken been marinated toss it in a bowl of flour pouring in all the liquid from the marinade

Pour a generous amount of vegetable oil into a wok and heat until it starts to smoke then turn the heat down just enough for it to stop smoking.
Put the chicken cubes in the hot oil to fry (fry in batches so that you do not overcrowd the wok) cook until golden this should only take a few minutes! Once cooled put on a kitchen towel to so that it can soke up any excess oil.

Grate the zest of 3 lemons the cut them into half and juice them mix the lemon zest into the juice but save a little for garnish also save the lemon carcass for later too

After a few minutes remove the lemon carcass and pour the lemon juice into the wok. Allow it to reduce a little then add the xanthan gloop and stir. once it thickens it is ready.
To survive plate up the rice and chicken. Garnish with the rest of the lemon zest and sliced lemon then pour the lemon source over the chicken.
