Chinese Style House Special Lobster

Today we are making house special lobster. I love this dish so much. Every year for my birthday we get house special lobster at my favorite restaurant, I don’t know why I never decides to do it at home. After numerous recipe testing I finally am happy with the flavor! This version uses lobster tails filleted out, but you can just chop them up as well into 1 inch cubes and toss it in the sauce!

Instructions

Step 1
In a wok or pot add oil and let it come to high heat to deep fry lobsters (approx. 350-375 degrees F)
Step 2
While oil is heating up, chop your lobster, into manageable sized ( if using live lobster: tail from head, claws from head, break claws from joint, and cut tail in half and chop into quarters, pat dry and place in a bowl) (if female lobsters and have eggs , remove egg sacks and place in sauce mix))
Step 3
Beat two eggs and combine with chopped lobster to ensure even coating.
Step 4
Toss lobster in corn starch until fully coated
Step 5
Begin chopping garlic, slicing jalapeños and green onions, set aside
Step 6
For the sauce mix combine palm sugar, soy sauce, oyster sauce, water, sesame oil, corn starch, and white pepper powder until consistency is smooth and no clumps remain
Step 7
Once oil is hot, fry coated lobster for a max of 1 minute, once done shake off excess oil and place on paper towels to absorb excess oil
Step 8
In a wok on medium high heat, add butter, once melted and sizzling, toss in garlic, green onions, and jalapeños and sauté for 30 seconds
Step 9
Toss in sauce mix and toss for an additional 15 seconds.
Step 10
Add fried lobster and toss, ensuring all pieces coated nicely in sauce mix
Step 11
Garnish with fresh green onions
