Spicy Shrimp Pasta

Instructions

Step 1
* Peel shrimp and add to a large bowl. Season to taste with old bay and adobo seasoning. You can also add a light shake or two of cayenne to the shrimp for some extra heat.
Step 2
* Boil pasta according to package direction, making sure you salt your water before adding the pasta. Don't forget to measure out 1/2 cup of the pasta water before you drain your noodles.
Step 3
* In a large skillet, over medium-high heat, add in 1 tsp olive oil. Add shrimp sauté, flipping once, until almost cooked through, about 2-3 minutes total. Remove shrimp to a plate and set aside. 

Step 4
* In the same skillet, over medium heat,add 1 Tbs butter. Saute onion until soft then add garlic and red pepper flakes and cook for 30 seconds, then add in white wine and pasta water. Add chicken bouillon. Reduce heat to simmer and cook until liquid has reduced by half, 7-10 minutes. 

Step 5
* Add shrimp and its juices back to the skillet, then add in the cooked pasta. Toss everything together over medium heat until sauce starts to absorb into the pasta, around 2-4 minutes. 

Step 6
* Remove skillet from heat. Add lemon juice, starting with just 2 tbsp. Add zest. Add parmesan cheese and parsley, continuing to toss everything until most of the liquid is absorbed and the cheese has melted. Add remaining TBS of butter and add more adobo seasoning to taste. Taste the pasta, adding more lemon and seasoning as desired. 

Step 7
* Serve with lemon wedges and extra parmesan and parsley if desired.
