Instructions

Step 1
In a large heavy stockpot, heat olive oil over medium heat. Add the chopped onion, carrots, celery, and green beans. Cook for 7-8 minutes or until slightly soft and fragrant. Add parsley, oregano, basil, garlic powder, and onion powder. Cook for 2 minutes, stirring constantly. Note: if you don’t like celery try celery salt instead
Step 2
Pour in beef broth, tomato sauce, fire-roasted tomatoes, and meatballs; simmer for 7-10 minutes. Add the pasta and cook for an additional 10 minutes. Garnish with chopped fresh parsley, season with salt and pepper to taste, and serve promptly. Note: you can use rotel instead if you want to

Step 3
In a small bowl, combine the breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, pepper, and the egg.
Step 4
Add the breadcrumb mixture, eggs, milk, Italian sausage, and ground beef to a large bowl. Use your hands to mix the ingredients together until evenly combined. Avoid over mixing the meat.
Step 5
Divide and shape the meat meatballs

Preheat the oven to 400ºF. Line a baking sheet with parchment or use a greased pan. Place the meatballs on the baking sheet about one inch apart from each other.
Step 7
Bake the meatballs for about 15 minutes, or until lightly browned.
Step 8
Transfer the meatballs into the soup
