Instructions

Step 1
Trim fat from pork. Cut pork horizontally into two 4 oz pieces. Cut a lengthwise slit down the center of each piece of tenderloin 2/3 of the way through the meat. Sprinkle with coarsely ground pepper.
Step 2
Combine marmalade and next three ingredients in a small bowl, and stir well. Brush marmalade mixture evenly over pork, reserving remaining marmalade mixture.
Step 3
Prepare grill. Place pork on grill rack coated with cooking spray; grill 8 minutes on each side or until instant read thermometer registers 160°(slightly pink), basting frequently with reserved marmalade mixture. Garnish with mint sprigs, if desired.
