Ingredients

For The Sauces
½ cupparmesan Reggiano
freshly grated
½ cupfontina cheese
freshly grated
1 cupsmoked gouda cheese
freshly grated
2garlic gloves
minced
0.5shallot
small, minced
1 cuphalf & half
Unsalted Butter
as needed
AP flour
as needed
1 cupCavatappi
ground white pepper
as needed
1 Tspchicken bouillon cubes
as needed
cayenne pepper
as needed
For The Lobster
For The topping
¼ cuppanko breadcrumbs
Butter
if needed
cayenne pepper
chicken bouillon cubes
½ tspdried parsley
or Italian seasoning

Instructions
For The Topping
Step 1
On medium low heat : using a small skillet add the breadcrumbs along with the cayenne pepper, garlic powder, and chicken bouillon. You can add a little butter if needed . Stir it constantly to avoid it from burning. Toast for 2 min then set aside for later

For The Lobster

On medium melt the butter in skillet over medium heat ; then your chunks of lobster . Season with the seasonings mentioned. Once fully cooked through set aside

For The Mac and cheese

Boil your pasta until almost al dente

Grate your cheeses and add in them to a clean bowl

Using the same pan we cook the lobster chunks; Add some more butter to the pan and lower to medium low.

Then add the garlic & shallot, sauté and allow to get fragrant;

then gradually add in the flour making sure to vigorously whisk to form a nice blonde roux . Lower heat to low then add your half half & stir slowly until it begins to thicken .

Season with the cayenne pepper, white pepper, & chicken bouillon

Add 1/2 of the grated cheeses cheese n stir until nice n smooth . Add the Cavatappi to the mix , and the other half the grated cheeses and mix . add your lobster and mix .

Add the Cavatappi to the mix , and the other half the grated cheeses and mix . add your lobster and mix

Then layer your Mac in cheese in 2 layers in a oven safe dish making sure to add cheese on the first layer then other layer of Mac & cheese. Then some more cheese on top along with the season breadcrumbs on top & bake at 400 for 6-8 min then on broil until it brown nice and golden . Allow to cool for a few then serve
