Ingredients

½ cuponion
diced
1red pepper
large, diced
½ cupcelery
thinly sliced
1 TbsFresh garlic
minced
1.25Lean ground turkey
4 tspchili powder
1 Tbsppaprika
1 ½ tspground cumin
¼ tspcayenne pepper
1can fire roasted diced tomatoes
1can crushed tomatoes
½ cupwater
2 Tbstomato paste
salt
to taste
pepper
to taste
2bay leaves
¼ cupparsley
chopped
Instructions
Step 1
Heat 1/4 cup of water in a large pan on medium-high heat. Add in the onion, pepper, celery and garlic and cook until they begin to soften, about 3 minutes.
Step 2
Add the turkey to the pan and cook until it starts to brown, about 3-4 mins. Drain off any liquid.
Step 3
Add in the spices and cook until fragrant and the turkey is no longer pink, about 3-4 minutes.
Step 4
Add in the fire roasted tomatoes, crushed tomatoes, water, tomato paste, salt and pepper and stir until well combined. Then, bring to a boil.
Step 5
Once boiling, stir in the bay leaves, turn the heat to medium low and cover the pan. Simmer for 30 mins, stirring occasionally.
Step 6
Once simmered, remove the bay leaves and stir in the parsley.
