For the sauce
Instructions
Step 1
Cut the eggplant and bell pepper into super thin strips.
Step 2
Fry finely chopped red onion, garlic and ginger for a few minutes before adding the eggplant and pepper. Fry until the eggplant is soft like noodles.
Step 3
In a small bowl, mix together all ingredients listed under “sauce”.
Step 4
Pour the sauce over the eggplant noodles and stir until the sauce is thick and sticky. Enjoy!
