The Spring Roll Dough
Instructions
Step 1
Mix the spring roll dough ingredients til completely combined
Step 2
Wrap in cling film and set aside for an hour
Step 3
Slice the bacon into small lardons and fry for 5 minutes til crispy and the fat is rendered then drain the fat away and allow the bacon to cook
Step 4
Boil the lasagna sheets as per packet instructions til fully cooked
Step 5
Finely grate or blend the pecorino
Step 6
Whisk together the eggs, pecorino, salt and pepper
Step 7
Lay a tablespoon of the egg cheese mixture onto the lasagna sheets leaving a 1cm lip at the edges and a 3cm lip at the end
Step 8
Sprinkle over the bacon and roll up lengthways so the 3cm lip sticks to the outside of the pasta roll
Step 9
Split the spring roll into 12 and roll each piece to a 5 by 5 inch square
Step 10
Lay a pasta roll on each and wet the edges
Step 11
Fold the sides over and roll up so it is completely sealed
Step 12
Heat the sunflower oil to 180C and fry the spring rolls for 4 minutes til golden brown
Step 13
Drain the excess oil and serve up and enjoy! I dipped mine in garlic mayo
