Healthy homemade Mexican inspired green goddess salad dressing. The best way I can describe this is a cross between better for you version of pollo loco’s cilantro salad dressing and a crema poblana.

Instructions

Step 1
1. Roast the poblano pepper and serranos (omit if you don’t it spicy) using your preferred method. (Air fry at 390° F for 10 minutes)

2. Let it “sweat” out in a plastic bag, peel the skin, and remove the seeds.
Step 3
3. Add to a blender with the rest of the ingredients. Blend until smooth.
Step 4
4. This recipe makes roughly ~600 mL and 1 serving is ~150 mL.

5. Add to any salad and enjoy!
