Step 1
Peel and cut sweet potatoes into cubes. Place them in a large pot and cover with cold water. Bring potatoes to a boil until fork tender for about 15 minutes than drain. In your mixer combine butter, vanilla, eggs, sugar, and heavy cream. Add in potatoes and mix until fully combined. Place into a casserole dish and top with marshmallows. Bake at 350° for 30 minutes until marshmallows are golden brown. Enjoy!
