Ingredients
6 servings
olive oil
1onion
cut in half horizontally
ginger
Palm-sized, smashed
4star anise
3black cardamom pods
slightly smashed
5cloves
1 Tbspcoriander seed
1 Tbspfennel seed
1cinnamon stick
½ cupfish sauce
2chicken breast halves
bone-in, or 4 bone-in chicken thighs, I had a lot of chicken, 4 whole legs, thigh and drumstick it might actually have been too much
Water
Rice noodle stick

Instructions
Step 1
· Use sauté function on high. Heat oil and char onion halves and ginger. Char them until black without stirring (approx. 5 mins)
Step 2
· Toss in the aromatics and stir for a few more minutes
Step 3
· Add fish sauce, chicken and water to the pressure cooker fill line. (May have to play around with # of chicken pieces and water level)
Step 4
· Pressure cook HIGH for 30 minutes
Step 5
o While pressure is building, put the noodles in cold water and soak for 30 minutes
Step 6
o Boil water for noodles
Step 7
· Quick release, adjust seasoning
Step 8
· Remove chicken, discard skin and bones, and shred when cool enough to handle.
Step 9
· Cook noodles in boiling water until they are softened (no more than a minute, depending on soak time). I did this bowl by bowl.
Step 10
· Pour soup over noodles through a strainer.
Step 11
· Serve and add toppings!
