Instructions

Step 1
Plunge the pasta into a large saucepan of lightly salted boiling water. Return to a boil and cook for 10-12 minutes or according to the package directions until just tender. Drain well and return to the pan.
Step 2
Meanwhile, heat the oil in a skillet, add the leeks, garlic, and salt and pepper to taste and cook gently for 5 minutes.
Step 3
Add the tuna and cook, stirring, for 1 minute. Bring to a boil, and boil until reduced by half. Stir in the cream and heat through for 2-3 minutes.
Step 4
Add the tuna sauce to the pasta with the parsley and stir over a medium heat for 1 minute. Serve immediately with an rocket salad
