Thai Chicken and Chickpea Green Curry

Instructions

Step 1
Bash the chicken breasts flat with the base of a pot, blend the marinade ingredients and rub into the chicken. Marinate for a few hours.
Step 2
In a liquidiser, blend all the curry ingredients apart from the lime juice, fish sauce and chickpeas. Pour into a pot with the chickpeas and simmer until thickened (around 15 minutes). Add the lime juice and fish sauce.
Step 3
While the curry simmers, griddle the chicken for 4-5 minutes on each side until done. Leave to rest for a few minutes then slice.
Step 4
Curry goes in the base of wide bowls, sliced chicken on top with optional extra lime wedges.
