¾ cupwater

1 cupcocoa

2 cupswhite rice flour

½ cupbrown rice flour

½ cuptapioca flour

2 Tbspbaking powder

2 tspxanthan gum

1 ½ tspsalt

1 cupsugar

½ cupolive oil

½ cupapplesauce

1 cupunsweetened almond milk
or dairy-free milk of your choice

1 Tbspvanilla

3 ½ cupzucchini
finely shredded

1 cupdairy-free chocolate chips
Instructions
Step 1
Combine flax meal in water and set aside.
Step 2
Combine all dry ingredients in a large mixing bowl. Stir will.
Step 3
Add all wet ingredients, including zucchini. Mix thoroughly.
Step 4
Divide batter into two parchment -paper lined bread pans (lightly oiled). Bake at 350 for one hour, or until toothpick comes out clean.
