Step 1
Preheat your oven to 350F.
Step 2
To a bowl combine grated zucchini, maple syrup, avocado oil, eggs, Greek yogurt and vanilla. MIx well. Then add in all of the dry ingredients - cinnamon, cocoa powder, salt, baking soda and flour. Mix until there are no more clumps.
Step 3
Divide batter evenly into desired baking pan, and bake at 350F. I used a mini loaf pan, but you could use a muffin pan or large loaf pan. Baking times vary depending on baking tray - but once you can pierce the loaf with a toothpick and it comes out clean it is done. I check it after 20 minutes then in 5 minute intervals.
