I use SELLA long grain Basmati, best is raw parboiled rice or sella basmati rice

2 ½ cupturkey stock

Instructions
Step 1
Start by preparing your meat stock
Step 2
Place your cleaned and cut Turkey wings in a large pot
Step 3
add in onions , chicken seasoning, chopped ginger, minced garlic, salt, thyme and curry powder
Step 4
Add water, mix well, cover and cook on medium heat for 15 minutes or until cooked
Step 5
Separate meat from meat stock. Sieve meat stock and set aside
Step 6
Fry, bake or airfry turkey until golden brown.
Step 7
In a large pot add blended tomatoes, peppers and onions
Step 8
Set to medium heat and reduce mixture until its thick or almost dry
Step 9
Wash rice multiple times until water is clear and set aside
Step 10
Add oil to a large iron or cast iron pot
Step 11
Add chopped onions, fry until fragrant
Step 12
Add tomato paste, mix and fry for 3-5 minutes
Step 13
Add reduced blended tomato mixture, mix well and season with stock cubes, curry powder ,thyme and bayleaf

Mix well and add add meat stock
Step 15
Add salt ,washed rice and mix until well combined
Step 16
Add water to reach slightly above the level of the rice
Step 17
Cover with foil paper to help trap the steam
Step 18
Cook for about 20 minutes on medium heat
Step 19
Mix thoroughly, top with fried turkey and serve
