Ingredients

200gdark chocolate
200gunsalted butter
4eggs

200mlmilk
100gsoft dark brown sugar
160gcaster sugar
200gplain flour
50gcocoa powder
2 tspbaking powder
½ tspbicarbonate of soda
¼ tspsalt
For the ganache frosting
Instructions
Step 1
Preheat the oven to 180’C. Grease and line 2 x 8 inch round cake tins.
Step 2
Melt together the dark chocolate and unsalted butter.
Step 3
Pour in both the sugars, eggs and milk.
Step 4
In a separate bowl, mix together the plain flour, cocoa powder, baking powder, bicarbonate of soda and salt until well combined.
Step 5
Pour the wet ingredients into the dry ingredients and mix until just combined.
Step 6
Pour the batter into the prepared cake tins and bake for 25-30 minutes until risen and a skewer inserted into the center comes out clean.
Step 7
Allow the cake layers to cool on wire racks until completely cool.
Step 8
To make the ganache, heat the double cream in a small pan over a low heat until steaming but not boiling. Mix in the chocolate and brown sugar until smooth. Allow to cool.
Step 9
Once both the cake layers and ganache are cool, assemble the layers and cover with ganache. Set in a fridge to set.
