Risotto w/ Ricotta miso, coffee, and honey
Optional: Instead of onions and white wine, add acidity with Sour butter at the end.
Reduce white wine and onion for a while with butter to make a sour butter.

Instructions
Step 1

Measure rice
Step 2

Toast rice with a dash of oil and salt. Keep stirring. If you can’t stand touching the rice more than 3 seconds it’s ready to add water.
Step 3

Add hot water to just above the rice and cook ~13 min.

Let sit for 2 min
Step 5

mantecatura process: you add fresh cold butter to the risotto when it is almost finished, stirring vigorously so that it develops that desired creaminess. In this case, add a dollop of ricotta miso prior as well.
Step 6
Add a final dash of apple cider vinegar.
Step 7

Add a swirl of honey and pinch of super fine ground coffee
