Step 1
In a saucepan over med.-high, toast rice in butter. Once rice smells fragrant (2-3 min.), add remaining ingredients; stir to combine.
Step 2
Bring to boil, cover, & turn heat down to low. Simmer (15-20 min.) until all liquid is absorbed.
Step 3
Fluff with fork; serve with more cilantro.
