Instructions

Step 1
In the mixer bowl of a Kitchen Aide fitted with the paddle attachment, add warm water and yeast and stir slightly. Wait for it.

Step 2
Add the Sugar, salt, and olive oil. Stir, then let it rest for a min or two.

Step 3
Add the flour, one cup at a time. When the last cup is added, but not yet stirred in, change the attachment to the bread hook and knead for 5-6 minutes

Step 4
Take dough out and form into a ball. Place in a greased bowl in a warm area and let rise till doubled, about 1 hour.
Step 5
Punch down and divide, then let rest for 15 minutes. Roll out into pizza dough and add toppings.
Step 6
Bake in a 400F oven w/hot stone, bottom shelf, 17-20 minutes.
Step 7
For Calzones, 425F w/hot stone, middle shelf, 14-16 minutes
