Instructions

Step 1
In a bowl, add milk, yeast and sugar and mix everything with a spoon.

Add flour and salt and knead for a couple of mins or until you form a dough.

Incorporate butter (room temperature) and keep kneading for a couple more mins or until you form a smooth dough.

Cover your bowl with cling film and let your dough rest for 1 hour.
Step 5
If you feel like your dough is too soft, you can add a tiny amount of extra flour but don’t add too much of it otherwise your Pizza Bombs will become too hard.
Step 6
Now divide your dough into 8 pieces and use your hands to flatten each piece of dough into a small pizza (make sure it is not too thin).

Add 1 teaspoon tomato passata, some grated mozzarella (please use pizza mozzarella and not the fresh one as it’s too watery) and 1 pepperoni (or salame).
Step 8
Use your hands to close your little pizza into a ball.

Place your Pizza Bombs on a baking tray previously lined with parchment paper.

If you have time, I suggest covering your Pizza Bombs with cling film and letting them proof for another 30 mins.
Step 11
In the meantime, beat 1 egg then brush it on your Pizza Bombs before baking them.

Bake for about 20 mins or until golden (170C/340F).

If your Pizza Bombs are turning gold too early, cover them with some aluminium foil to prevent them from burning.

In the meantime, melt butter in the microwave for about 40 seconds then add minced garlic.

Brush your Pizza Bombs with your garlic butter then sprinkle some chopped parsley and grated Parmigiano on top before serving. Buon appetito!
