Instructions

Step 1
1. Put a pot of water on the stove, add 1 tbsp oil and 1 tsp salt, then bring to a boil. While waiting for the water to come to a boil, dice the sweet potato into small cubes (about 1/2 inch thick), dice the onion, cut the broccoli into smaller florets, and zest a lemon. After zesting the lemon, juice half of it and save the other half for another meal.
Step 2
2. Place a pan on the stove over medium heat. When the pan is hot, add 1 tbsp oil and then add the sweet potato cubes and diced onion. Season with 1/2 tsp garlic powder and 1/2 tsp crushed red pepper and then cook, stirring occasionally, for ~7-8 minutes.
Step 3
3. While the sweet potato and onion cooks, add the orzo to the pot of boiling water and cook, stirring occasionally, ~5-7 minutes or until fully cooked. When done, reserve ~1 cup of the pasta water and then drain the rest.
Step 4
4. After the sweet potato and onion has cooked for ~7-8 minutes, add the broccoli to the pan and then add the lemon juice. Cook, stirring occasionally, ~5 minutes. After ~5 minutes, add half (or full amount if needed) of the cup of reserved pasta water to the pan and cook for another ~2 minutes then turn off the heat.
Step 5
5. Add the drained orzo to the pan of veggies, toss to combine, then put mixture in serving bowls and finish with the lemon zest.
